fast & tasty


For all the drama and reflective prose and emotion that’s happened in the past months, we’re actually doing pretty great. Maybe it’s just that first snow falling outside my window or the fact that little Knightley is taking a few minutes to rest with his brother and Papa, but I feel like we’re finally getting things together. That’s awesome.
We’re close to being packed, with the goal being Thursday at noon. (Our goods are shipping a couple of weeks before us; just how things worked out with the mover and our schedules and such). Given this, and the fact that our final trip will be the four of us in our little Matrix and not a lot of extra packing space, most of our everyday gear has been boxed. While meal prep and such now requires a bit more creativity with tools and such, the cabin feels so open and fresh. There’s something pretty great about getting all the stuff out of the way and just enjoying the living space. Unfortunately, it just makes me love this house a little bit more. It’s seriously an incredible home. I’ll miss it. But with this early packing things,  we’ll be able to enjoy it without dealing with too much hassle in the last week or too.

Somehow I have fresh caraway-rye bread in the oven. And somehow that baby is still sleeping. It’s a magical night! 😉

Before I go, here’s a random meal idea for mamas on-the-go. While I love creative cooking, there are nights when I need something tasty but fairly simple. This has become my ‘go to’ for those evenings. J loves it, it’s full of veggies and protein, and it’s versatile enough to accommodate all kinds of random bits from the fridge.

Super Easy Thai Peanut Curry (I think that’s what it should be called…)

Lots of veggies, thinly sliced (about 3 or 4 cups worth? Bell pepers, white onion, matchstick carrots/yams/pumkin, broccoli…)

1 can tomatoe sauce
1 can coconut milk
¼ cup peanut butter (I think…. I just kind of scoop and taste and adjust…)
2-4 tbsp red curry paste (adjusted to your taste)

Rice noodles (or rice or sprouts or…)
Topping: sliced green onions, finely chopped cilantro, peanuts, sliced boiled eggs (I usually do all four of these, they work well together and increase the protein)
Option: chicken or beef (doesn’t work so great with fish)

– Sautee veggies till tender-crisp
– Stir in that second set of ingredients and adjust to taste.
– Serve on top of the noodles, topped with those yummy toppings. Add spring rolls or satay on the side if you like.
Note: if you need it to be super easy; pick up pre-cut veggies and add in some pre-cooked chicken.

It’s easy, taste, and can be made as big or small as you like. Let me know if you try it!
